Red White and Blue Popsicles is a refreshing summer treat that’s just perfect for 4th of July, Memorial Day or Labor Day. I try to make it with my Kids. They get a fun project to work on (not to mention the mess they create ?)

These Patriotic Popsicles are made with strawberries, blueberries, coconut milk, sugar, plain yogurt, and food coloring.

Don’t they look absolutely patriotic? Feel more American and get the vibes right with this easy and delicious 4th of july dessert.

Whenever I am hosting a pool party for fourth of July? I just cannot skip these cute little red, white, and blue popsicles.

My kids love them. I love them. And, trust me, I am known around the block as the lady who makes the best Red, White, and Blue Popsicles on the Fourth of July.

My favorite memory of these Popsicles are from the time when I used to date my husband. Both of us have this tradition of going to the beach to watch the fireworks and enjoy some popsicles.

That year, we were doing the same thing. I was enjoying the fireworks and then I don’t know from where, I see him standing in one knee with a ring! ??

That was the time he proposed to me. ?

Since then 4th of July, Summers, Popsicles, Fireworks, Beaches have a special significance in my life.

Kid-Friendly Ice Pops for the Summers

I love making recipes with my Kids. In fact, every summer we make it a point to make at least 1 recipe together.

This Ice Pop for summer is one of our favorite. Here are some of our other favorites.

A Hot Day = Fruity Ice Pops

In my home, we love summers. I am sure you do too.

Summers are like those times when the kids are at home. You can stay out late at night. You get to enjoy grilled food. Then there’s Mother’s Day (a day that I am more excited about than my Birthday ?), there’s Father’s Day and of course there is 4th of July.

Here are some of my favorite 4th of july recipes:

  • Strawberries
  • Blueberries
  • Coconut Milk
  • Sugar
  • Plain Yogurt
  • Red and Blue Food Coloring

How to Make Red White and Blue Popsicles

This easy 4th of July Popsicle can be made in just few easy steps.

  • STEP 1: Cut up the Strawberries

No rocket science here. Just hold the stem and cut strawberries into thin slices. You’ll need about 1 cup of sliced strawberries.

  • STEP 2: Blend the Strawberries

You can use any blender that you have. Put your strawberries in the blender. Add the strawberry slices in the blender along with some sugar and a teaspoon of water. Blend until smooth. Pour this into a bowl and set it aside.

  • STEP 3: Repeat the Process with Blueberries

Do the same thing with the blueberries. Place them in a blender with some sugar and just a little amount of water. Blend until smooth. Pour this into a bowl and set it aside.

  • STEP 4: Make the White Layer

Combine Heavy Whipping Cream with some coconut milk. It’s not necessary that you have to use coconut milk. You can use whole milk or almond milk or soy milk or anything else that you have in hand.

  • STEP 5: Add more flavors to the layers

Add in a few tablespoons of your creamy white layer to the red and blue layer.

Secondly, at this point you might notice that your blue layer (one you’ve made with blueberries) has become sort of purple. So, just add in few drops of blue food coloring and your blue layer will become gorgeously blue.

Now, Make the red layer bright red. Add few drops of red food coloring and make your red layer (one you had made with strawberries) bright red.

  • STEP 6: Pour and Freeze the Red Layer (The one with the Strawberries)

Pour the juicy Red layer up to 1/3rd of the Popsicle mold or a Silicone Mold. Place it in the freezer for 1 hour and allow it to set completely. Wait until the layer is solid enough to not mix with another layer.

  • STEP 7: Pour and Freeze the White Layer (The one with coconut milk)

Pour the white layer leaving 1/3rd of the popsicle mold for the top layer. Freeze it for another 1 hour until it is completely frozen.

  • STEP 8: Pour and Freeze the Blue Layer (The one with Blueberries)

Finally, Pour the Blue layer all the way up to the top. Stick on the tops and freeze this until completely sets for at least 3-4 hours.

  • STEP 9: Remove the Popsicles from the Molds

Take a tall cup of warm water. Dip the popsicles in the cup. This will loosen the popsicle from the mold. Pull out tightly until the popsicle comes out of the mold.

Top Tips

  • Be mindful of the amount of sugar you add. Too much sugar will reduce the fruity taste.
  • If using tart strawberries then your red layer might require more sugar.
  • You can skip heavy whipping cream with plain greek yogurt. However, I suggest heavy whipping cream since its thick and holds together quickly.
  • Don’t forget to mix in some of the coconut-y white layer to the red and blue. It makes it creamier and richer.
  • You can use any version of red and blue food coloring. I like light blue because its more appealing to me.
  • Make sure you dip the popsicle mold in warm water to remove it easily.

Quick Variations:

  • Raspberries – You can replace strawberries with raspberries if you like them.
  • Blackberries – Although blackberries will have a dark black color, but you are anyway using blue food color, so there shouldn’t be a problem. Although, I am not completely sure about blackberries.
  • Plain Yogurt – You can definitely replace heavy whipping cream with plain yogurt if you want.

Ingredients

Red Layer

  • 2 cups Strawberries sliced into 1/4 inch thick slices (almost 3/4 pound)
  • 3 Tablespoons Granulated Sugar
  • 1-2 teaspoon water

Blue Layer

  • 2 cups blueberries make sure they are fresh (almost 1 pound)
  • 2 tablespoons granulated sugar
  • 1-2 teaspoon water

White Layer

  • 2 cups heavy whipping cream can be replaced with Plain Greek Yogurt
  • 2 cups coconut milk
  • 1 drop Red Food Color
  • 1 drop Blue Food Color
  • 1 cup warm water to remove the popsicles from the mold

Instructions

  • In a medium sized mixing bowl combine sliced strawberries with granulated sugar and water. Set aside.

  • In an another medium sized mixing bowl combine fresh blueberries with granulated sugar and water. Set aside.It might look little purple-ish don’t worry, we have a fix for it later on.
  • In a separate medium sized mixing bowl combine coconut milk with heavy whipping cream. You don’t need any additional sugar for this layer.

  • Add one drop of red food color and about 2-3 tablespoons of white layer to the strawberry layer (the red one) make it bright red and creamier.

  • Repeat the same with blue layer (blueberry layer).

  • Pour the Red layer up to 1/3rd of the Silicone Mold or Popsicle mold. Freeze it for 1 hour or until it is solid enough to not mix with the other layers.

  • Pour white layer leaving 1/3rd of the space from the top for the blue layer.

  • Finally, Pour Blue layer all the way up to the top. Seal the popsicle molds by sticking in the tops. Freeze for at least 3-4 hours or until it becomes absolutely frozen.

  • To remove the red, white, and blue popsicles from the popsicle mold, take a cup full of warm water. Dip the frozen popsicle molds directly into warm water until it loosens up. Now bring it out and pull the mold and finally enjoy your red, white, and blue popsicle.
