Ingredients:

For the Coffee Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream

For the Apple Pie Filling:

  • 3 medium-sized apples (such as Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon all-purpose flour

For the Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, cold and cut into small pieces
  • 1/2 teaspoon ground cinnamon

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt for the coffee cake.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream. Begin and end with the dry ingredients, mixing until just combined.
  5. In a separate saucepan, melt the butter for the apple pie filling over medium heat. Add the diced apples, brown sugar, ground cinnamon, ground nutmeg, and flour. Cook for about 5 minutes or until the apples are slightly tender and the mixture has thickened. Remove from heat and set aside.
  6. Spread half of the coffee cake batter into the prepared baking pan. Spoon the apple pie filling evenly over the batter.
  7. Drop spoonfuls of the remaining coffee cake batter over the apple pie filling, and gently spread it out with a spatula to cover the filling.
  8. In a small bowl, combine the streusel topping ingredients—flour, granulated sugar, cold butter pieces, and ground cinnamon. Use your fingers or a pastry cutter to blend the ingredients until crumbly. Sprinkle the streusel topping over the coffee cake.
  9. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow the coffee cake to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.

Slice, serve, and enjoy this delectable Apple Pie Coffee Cake that perfectly marries the comforting flavors of coffee cake and the classic appeal of apple pie. Whether shared with friends or savored alone, this treat is sure to become a favorite in your baking repertoire.
