These easy mini cheesecake bites are going to be your new best friend once you give them a try. Good old fashioned cheesecake (made with Philadelphia cream cheese and graham cracker crust) doesn’t get the credit it deserves.
I’m here to change that with these mini cheesecakes! This mini cheesecake recipe freezes really well so you might want to make a double batch.
- ° 200g Biscuits
- ° 100gm melted butter
- °5 eggs
- °700 gm cream cheese
- °100g (12 cups) sugar
- °150gm melted chocolate
- °2 tablespoons vegetable oil
- °40 g (1/3 cup) hazelnut kernels
– In a bowl, mix crushed biscuits with melted butter, transfer to a baking tray and press.
In another bowl, mix the cream cheese, eggs and sugar.
Pour over pressed biscuits. Bake at 160°C (320°F) for 45 minutes.
Cut them into squares and dip them in the mixture of melted chocolate and hazelnuts.
Freeze for 15 minutes.
